At the moment I can only highlight the whole of a text box, rather than parts.

It should be working press SHIFT+LEFT/RIGH ARROW key to mark single character or SHIFT+CTRL+LEFT/RIGHT ARROW key to mark whole word.
If you are not able to do this, then you are most probably using some old version of Pinta. Check the Help | About menu to see the version number. If it is not version 1.6 then you are using old one. In this case please go to the download page https://pinta-project.com/pintaproject/pinta/releases and download and install latest stable version.
Yes that works perfectly thanks - having clicked off a text box, please how can I go back and edit it?

If I understand you question correctly. You did the following: a) used Text object and typed some text, b) used some other object like Rectangle, c) now you would like to change the text.
One solution is by using Layers. For each text object create a new layer. When you need to change the text, erase the text with Eraser on that specific layer and type new text.
There is one more option, but it is useful only right after typing the text, because it involves undo action. Do the following to demonstrate a solution:
