I would make sense to create stable and development PPA
This is currently being worked on, hopefully it will be ready around the next release.
Few days ago PPA was established, see: https://launchpad.net/~pinta-maintainers/+archive/pinta-stable for now it is unofficial release, not yet publicly announced.
There is now also a step-by-step tutorial how to build Pinta from git source repository (for Ubuntu 11.10): http://pinta-project.com/HowTo.Installing-Pinta.ashx#using%20github
This has been completed for the 1.1 release!
