This will let you more easily select a wide range of colors instead of having to mess with the palette size.

Something to add to this: Be able to make and save a custom color palette for later use.
You can just click the foreground or background swatch and it will pop up the color wheel for you to select from. Is this not sufficient? Or just not discoverable?
(Custom color palettes are also already available in Edit->Palettes.)
I would also like the color pallets to auto save between sessions. If I forget to save a pallet, I would at least like the last two selected colors to be there when I open Pinta again.

As the previous comment mentioned, the colour picker can be accessed by clicking on the foreground / background swatch, and custom colour palettes were already supported. In Pinta 2.0 the recently used colours are also now saved between sessions.
