Making it so text is not rasterized / pixelized right away, letting you easily change the text later on. But still leaving text rasterization as an option.

Deal braker for me here.
If Pinta aims to be a clone of paint.net this should be implemented... it's a really nice feature!!
@jpxsat: actually, Paint.NET doesn't have this feature either.
OMG! @Thomas Goldstein you're right... don't understand why i was convinced of it :/
Anyway, now there's an extra reason for Pinta to do it: the clone to be better than the cloned :D
Something like this would probably require for the text to be held on a separate layer until you save the file, unless we used a custom format.
I'm working on this as part of my Google Summer of Code 2012 project.
Completed: GSoC
In Pinta 1.6, text is always bound to the image layer only for me. This is so even for text added after both creating a new layer, and unchecking the Layers box for the original image.

This is the key feature that I need before I get suggest my wife uses Pinta rather than struggling with The GIMP
